History of Ohiyaki
Ohiyaki was initiated by Chosamon (the founder of the Urasenke school of tea ceremony) who was invited by the fifth lord of the Kaga domain, Maeda Tsunanori, in the sixth year of the Kanbun era (1666). Chosamon was accompanied by Chosazen (the fourth generation of the Urasenke school), and it was Chosazen's disciple, Chosaimon, who began Ohiyaki in Kanazawa.
Since then, Ohiyaki has been built upon the principles of wabi-sabi in the way of tea, accumulating a history of 350 years.
In the sixth year of the Kanbun era (1666), Maeda Tsunanori, the fifth lord of the Kaga domain, invited Chosazen from Kyoto to Kanazawa to promote the way of tea. During that time, the first generation Chosaimon also came from Kyoto and started making tea utensils such as tea bowls from the local clay in areas like Ohi-mura (nowadays Ohi-cho) in the outskirts of Kanazawa. This marked the beginning of Ohiyaki, which is named after the Ohi region.
